Let me try to keep it short today as I cannot get used to this bad habit of waking up at 4AM.
For breakfast I had a baby spinach salad with smoked salmon and half of a laughing cow triangle, a fried egg, a full slice of gluten free, low carb bread with the other half of the laughing cow triangle. I also had coffee with milk and a brazil nut.
The reason why you see one Brazil nut every single day in my breakfasts is because one Brazil nut can supply a whole day's requirement of selenium. Brazil nuts are also rich in omega 6, copper, phosphorus, magnesium, and manganese. The tricky part here is to avoid overeating. The more is NOT the merrier. You can get more facts at:

I had a no sugar added DanActive, a banana, a skinny vanilla bean latte, and a handful of blackberries as snacks. Bananas are good but only in moderation. I am allowing myself to have a banana twice a week. I don't really think I need more than that.
For lunch I had a piece of roasted sockeye salmon with roasted broccoli (seasoned with garlic, salt, and olive oil), and cherry tomato salad with fresh
mozzarella cheese. I indulged today and had dessert. Too squares of 71% chocolate from Camino.
My “dinner” tonight started with a Special K breakfast shake as I had very little time to eat before my class. I also had a small bowl of salad and some stir fry veggies with tofu and chicken.
I hope that eventually my body will give it up on complaining about being hungry and it will use my fat as energy more efficiently. I don’t know for how long the symptoms should last but my headaches are driving me crazy. Sometimes I wonder if I am fit to drive. I wish I could hear from other people that are going through a strict diet to understand how bad my case is. I will visit my G.P. on the 22nd and ask for a huge set of tests to make sure that I am not killing my body.
On a good note, today I was able to wear a pair of jeans that was stuck in my closet for at least 8 months. I am very happy! I cannot wait to see them loose on me (and then move to the next pair of unused jeans).
